VINEYARDS: Wine obtained from an accurate selection of Glera grapes hand-picked.
The training system follows the standard of organic farming.
VINIFICATION: White vinification. First fermentation in stainless steel autoclaves
under controlled temperature. Second fermentation in steel autoclaves at low temperatures (approx. 14°C.) with selected yeasts, according to the Charmat Method.
Alcohol content: 11.50% vol.
Total acidity: 5.70 g/l
Residual sugars: 12.40 g/l
Total dry extract: 28.00 g/l
Colour: bright straw-yellow;
Perlage: fine and lively;
Bouquet: pleasant with notes of Williams pear and floral hints of Narcissus;
Taste: fresh and soft, pleasantly dry.
FOOD MATCHES: Excellent as an aperitif. It is perfect with delicate dishes, fish and shellfish.
SERVING TEMPERATURE: Serve at 6°-8°C.
