CATEGORY: Monti (Hills) Lessini D.o.c. Sparkling Brut – Classic Method
VINIFICATION: Wine obtained from a selection of the best Durella grapes, an ancient autochthon variety grown in Lessinia area, in vineyards mostly located on high hills. The soil of volcanic origin. Hand harvest of the grapes.
VINIFICATION: Soft pressing under low temperature of 10-12°C. First fermentation in autoclaves at controlled temperature of 16°-18°C.
Second fermentation during the following spring time with bottle refinement for at least 48 months.
Alcohol content: 12.50% vol.
Total acidity: 6.80 g/l
Residual sugars: 4.20 g/l
Total dry extract: 24 g/l
Colour: straw yellow;
Perlage: fine, elegant and persistent;
Bouquet: pleasant with fragrant/balmy notes accompanied by wild flowers hints, white fruits and delicate vanilla notes;
Taste: dry, velvety, well balanced.
FOOD MATCHES: Perfect as aperitif, it pairs well with fish and shellfish dishes.
SERVING TEMPERATURE: Serve at 6°-8°C.
